Bahn Mi Salad

Pineapple Pepper Salmon
4-6 oz. Piece Salmon

1/2 Fresh Pineapple Diced

4 oz. Hot Giardiniera

1 oz. Fresh Basil Cut into thin Ribbons

Juice of 2 Lemons

Salt and Pepper to Taste.

1) Place fish in a baking dish, squeeze lemon juice over fish then sprinkle fish with salt and pepper. 2) Grill salmon for 4-6 minutes per side. 3) While fish is grilling cut the pineapple in bite size pieces and place in medium bowl. 4) Add Giardiniera. 5) When fish is done place on serving plates and spoon pineapple salsa onto fish. Add basil.

Italian Pork Chop
4 thick center cut bone in pork chops

4 -6 oz. Italian Balsamic dressing

4 oz. Hot Giardiniera

1 Tablespoon Italian seasoning or Oregano

4 Tablespoons good Parmesan

Sea Salt & Pepper to taste

1 cup Chicken Broth

1)Place chops in a baking dish, pour dressing to coat both sides and let marinate in the refrigerator for at least an hour 2)Heat grill to medium - high and oven to 375 3)Pat marinade almost all the way off of chops but leave remaining marinade in dish. 4)Grill for 5-8 minutes per side 5)Add broth to dish. After grilling chops return to pan with broth and marinade. 6)Top with Parmesan then Giardinera and place in oven for 10 more minutes. Internal temp. should get to 145 7)Remove from oven and let rest for 10 minutes before serving Spoon pan juice over chops.
